Properties

KeyValue
bodyCut the loaf in half through the middle and look. Dense and tight near the base, with a few large, irregular holes and a gummy feel: under-fermented. Extend bulk next time, or keep the dough warmer. Flat, spread out, with small even holes, a pale crust and a sharp sour taste: over-fermented. Shorten bulk, or mix with cooler water. Good volume but one large cavern under the crust: usually shaping. Flour or air was trapped in the fold, or the loaf went into the oven under-proofed. Even, open holes from edge to edge, a thin crisp crust and a loaf that feels light for its size: write down exactly what you did. Change one thing per bake. Your log is how you'll know which change worked.
