body | A levain is a portion of starter fed specifically for one dough. Building it separately means your starter jar carries on undisturbed, and you decide when the levain will be ripe.
The night before, about 10 to 12 hours ahead: 10 g starter, 55 g flour, 55 g water, in a clean jar at about 75°F. That makes 120 g, enough for the 100 g the dough needs with a little left on the jar.
Use it when it has at least doubled, the top is domed and it smells bright and milky. If you're mixing in the afternoon instead, build it 1:2:2 in the morning: it will be ready in four to six hours. |
